Newborn Session
Little Elizabeth was a great sport for her photography session! At only 5 days new she was alert, happy, and as cute as can be.

Cream Cheese and Chive Wontons
Ingredients:
Won Ton Wrappers (found in grocery aisle with the tofu, near vegetables)
Light Cream Cheese
3-5 Chives (to taste)
Heat oven to 425. Place won ton wrappers in mini muffin pan and bake for 6 minutes.
While the won tons cook, mix together the cream cheese and chives.
Take won tons out of the oven, and lower the heat to 350. Place a small spoonful of cheese into each won ton and bake for another 5 minutes or until cheese is melted. Enjoy!

Vegetarian Squash and Corn Enchiladas with Salad
Vegetarian Squash and Corn Enchiladas
Ingredients:
1 lb squash (I just used frozen and thawed it)
1/2 cup corn
Sprinkle of salt and pepper
1/4 cup yellow onion
1 peeled and minced garlic clove
12 Corn tortillas
Green enchilada sauce (12 oz can)
Mix the squash with the corn and add salt and pepper, set aside. Heat onion and garlic until onions are translucent. Add with the squash mixture. Layer the bottom of a 9x13 pan with green enchilada sauce. Place a spoonful of the squash mixture into a tortilla and roll. Place in the baking dish.
Top with the sauce and bake for 15-20 minutes at 350.
When finished, serve with cotija cheese sprinkled on top.
Salad with Cilantro Honey Lime Dressing
Ingredients for Dressing:
2 tbsp Honey
1/2 cup EVOO
1/2 cup lime juice
1 tbsp cilantro
1 tsp canned jalapenos
1 peeled and minced garlic clove
Mix together and chill.
Serve over lettuce, red bell pepper, and sugared pecans. Sprinkle cotija cheese on top.

Apple Dump Cake
Apple Dump Cake
2 cans apple pie filling (or you can use the fruit filling of your choice)
1 box yellow cake mix
1 1/2 sticks butter
Preheat oven to 350 degrees.
In an ungreased 9x13 inch cake pan, put in 2 cans of apple pie filling. Dump yellow cake mix on top of pie filling, then slice butter into pats and place evenly on top of cake mix. Bake for 50 minutes or until golden brown.
